Several shorter options, mostly flat with one real hill, very low key, very nice scenery
How long a ride are you looking for? How much climbing have you been/are you going to be doing? Chico Velo Mildflower (~100km) is reasonable. Wine Country 100K is reasonable. Delta Century (we've not done this) is billiard table flat, but can be windy. Tierra Bella 100K is reasonable, 100mi adds one long climb (Henry Coe). Mildflower, Wine country and Tierra Bella are extremely well run as are other large organized rides in Norcal. Oh, and Foxy's 100K is very doable for a Newbie. The Marin 100K might be the tougher of the 100K mentioned, but our perspective is suspect as oldsters on a tandem. Marin is also a great ride.

Like the previous commenter, I'm not sure about your skill level, and I don't know where you're located, but my first organized group ride was the Marin 1/2 metric century (about 35 miles) and I thought was great for a beginner (at the time I'd never ridden for 35 mi. straight before). Very well supported.

On the easiest end of the scale: Primavera family fun ride - Union City to the Bay and back... not even a speed bump for elevation change.
