Mexico Trails

Hi there everyone, I'm planning on biking down through Mexico next Sepember and was wondering if anyone had any good trail suggestions or trail books. I'm actually just in the midst of studying but somehow biking pages strike my interests a little more. I have heard of a trail called (or near) Santo Tomas which goes down the coast for 50 miles a little below the States' border. Ideally, I'd like to stay off actual roads, especcially concidering what I've seen of Mexican drivers (no offence to you Mexicans!)
If anyone has any tips about riding the country, I'd be greatful.
Thanks,
Milo
