Good catch! The r e d d i t thread talking about the bread mentioned the NYT article as well, but it was mobile cancer while I was trying to prep it so I went with the link I mentioned earlier.
I used bread flour this time, but snagged some while wheat while I was at the store. Any adjustments necessary when using that stuff?

I do have a recipe for whole wheat sandwich bread that makes a really good, non dense loaf. But it's a lot of work, not sure it's worth it. Unlike the recipe you're making right now- that's a huge bang for the buck IMO. Inexpensive to make, takes more time than effort, and really excellent compared to what you'd buy in a store.
You have to post back and tell us how it turned out.

And squirrels. The GF was walking home through a downtown park the other evening when a large red tail swopped down, grabbed a squirrel and flew off. They come to the large squares in center city to hunt once the leaves start falling from the trees.

When I was living in California in the 70s, there was a product called Figpep. A kind of heavy syrup that went well with anything. I ate a lot of it with yogurt and nuts.

Peregrine falcons are known for preying on other birds. I imagine they wouldn't turn down a rodent though.

I used the chainsaw, this morning, to cut up some old building sticks. I once thought I might build a stone oven and use that for fuel. I hauled it out to the roadside and put a free sign on it. It was gone, to the last stick, within the hour. During that process I remember hearing myself telling Mrs. Seeds that I'd rather be doing that than bicycling.

Yep, red-tails and peregrines do a great job keeping all the nuisance critters in check. They're not real fond of each other, though.

I HAVE seen red-tails prey on small birds, but not birds in flight, they're not agile enough for that.

Here's one of the most impressive birds on the planet, definitely the fastest, the Peregrine Falcon. As this shot shows, it's hard for the camera to keep up with him. That's the sharpest I could get him.
I have some shots where he's on cruise control, just gliding by, not flapping, and he's so fast I can't get the camera up on him and focused before he's already past me. It clearly seems like about 70mph, just gliding. Awesome bird.
I'm really happy that I've found a reliable place to spot this guy just 60 miles from home. Sooner or later I'll get an excellent pic.
