I am thinking of looking for suggestions on a single speed bike, also some websites to learn more about them.

I converted an old road bike to a fixed/single speed this past fall and it is a blast. I use it as a commuter and after awhile you realize you don't need all those gears...except if you have a lot of hills in your area. BTW I live in Seattle so I have 6 other bikes with lots of gears

These guys have a few interesting variations on the single-speed. Look at the "Country Road Bob" it is sort of a single speed cross-bike.
BTW: I ordered a Straight-up X 7 earlier this week and I'm looking forward to riding it this spring.

Fubar knows what's up...try a bass boat blue Homegrown convert on for size. I didn't think a bike could actually be sexy, and then I built it up. Yummy.

Of course converting a bike yourself is a good way to go but it can be expensive. If your looking for something built or to build iro's are good and relatively inexpensive.
