Hi I was wondering if a Shimano Saint crankset and a Model FC-M800 Bottom Bracket could fit on a 04 Specialized P2??

I'm sure it would. That's one way to double the value of your bike.

yeah man you should make sure that the bb and the crank are compatable. i dont know what styles they are available in (i.e. square taper/octalink....) but you could always swap the bb for something else if they dont work. but why would you get the saint? of i were you, i would go for a race face diabolous.

You are planning to spend $300 on a Saint crank? I don't think they cost nearly that much brand new and the whole Saint group was considered a market failure and disappeared in a couple of years.
