Spec sheets and/or parts list won't help; they will give the part name ("screw") and number.
I asssume this pedal is one of a pair; take the corresponding screw out of the other pedal and see of you can find something similar at your LBS or hardware store.
Helpful hint: It doesn't have to be identical, it just has to fit.

The parts lists currently listed for 7800 stuff on shimano's site usually have screw sizes like "M8x3" or the like. I am hoping to be able to order online or be able to walk into the hardware store armed with this info to make things easy.

Seems to me that walking into the store with a physical example of what you want would be a decent start, but what do I know..?
