Where are the fire roads?

Where are the fire roads?
I'm going to start doing a few short trips this summer (never toured before), but I can't stand riding on paved roads next to cars all the time. My favorite terrain to ride on is the "fire road": your typical dirt road, access road, unimproved road....whatever you'd like to call it. No cars, lots of trees, easy going.
Anyway, are there maps out there that show these dirt roads and not just the paved roads? I'm in North Carolina, but info about other regions of the country is fine as well. Any help is welcome.

What part of NC are you in? I'm just getting geared up for doing the same sort of touring in Western NC & might like some company. I just picked up a book detailing some local loop rides, both on and offroad, but can't seem to find it at the moment. There are a few good looking routes in there I might try, but there are tons of fire roads in any national forest around here that would surely be good, as well.
