Velocity Deep V Tire Size Survey

My current 20 mile RT commute is going to increase to about 33 miles one way and that has me thinking about doing a road/cyclocross/touring bike build based on a quality steel frame. I still have a number of questions about what frame to pick (that will be a future thread), but I am pretty well settled on a set of hand built Velocity Deep V's on either 105 or Ultegra hubs. What I am looking for is feedback about what tire size my fellow Clydes run on their Deep V's. My current thought is go with 700c x 28mm tires for a smoother ride, but I am open to suggestions.

I am hoping your feedback helps me narrow the frame field down a bit.

All advice greatly appreciated.
