Building Cross/Commuter/utility/touring bike, Help!

So Im building a bike to replace my car. it will mostly be for commuting around town, pleasure rides on and off the Bike trail and i also want to be able to load it up and do some light touring. I have my Frame (Surly Cross Check) and am looking at drive train stuff and am stuck between going with a Compact Double or a triple. the double would be fine most of the time but the low triple gears would be nice for touring.
and with the triple would it be better to run road or mountain componants? (thinking Shimano 105/ultegra or XT)
Any advice would be great

It depends on where you plan on touring. Cycling the Central Valley is a far cry from heading over to Reno on Donner Pass...
