KJ to Calories
I've tried doing a couple of google searches and I've been unable to find a conversion between work(kj) to calories burned. I'm really working hard to maintain my weight through all this training and I want to be sure that I am not eating too many calories.

kJ to kCal is ~4.18 to 1.
But if I understand correctly, since humans are only around 20-25% efficient at most on the bike, the kJ to kCal conversion is very close to 1:1. Somebody correct me if I misunderstood though.

cslone is correct. If you have a powermeter that records actual work done, then for most purposes, it's good enough to consider "energy expended doing useful work" equivalent to "food energy burnt".
