27" rims, convert to 700C?

I pulled my 86 Santana Arriva out of the attic and cleaned it up. It will fit 700C rims, should I convert it? I see there's more 27" tires today compared to last year, I'd like to run true 32~35mm tires on it.

Make sure your brake shoes will adjust enough to hit the rims square on. Other than that, no reason not to.

I was able to get Sun Rhyno Lites rims and DT 2.0/1.8 spokes for ~$110, worth it to me to have modern tire selection. I kept the old school 48H hubs, I didn't want to have a set of extra 27" wheels laying around. New hubs aren't cheap but I am!
