wheel questions

I am preparing an old (early 90s) Specialized Mountain Bike (7spd) for a tour, but need to purchase a new set of wheels. Can anyone make some suggestions, considering it isn't always easy to find a set of 7spd wheels. Any help is appreciated. Thank you.

It's possible to use a regular 8/9 sp rear wheel and use a 7sp cassette with an appropiate spacer. Something like this:

i believe you will need a 4.5 mm spacer to use your a 7 spd cassette.

is there a reason you can't go to 8spd cassette with the existing shifters?
