If I ever buy a complete bike again (not very likely), it will probably be 11-speed. Otherwise, I don't know how long it will be before I'm due for a complete drivetrain upgrade on either of my existing bikes, but that's when I'll go to 11.... hopefully at least 5 or so years, they aren't that old yet!

How future proof is an 11spd? Will frames go to 135 rear spacing with the next iteration, and suddenly all the bikes we've collected over the years are obsolete? Or is 11spd far enough, now that there are plenty of combinations with that elusive 16 that everyone was looking for?

Eh, how should I know... I'm just a dude that likes riding his bikes. Never cared much about 'future proof' as long as what I have works well and parts will be available for the foreseeable future. We've already went from 5 to 6, 6 to 7, 7 to 8, and so on to get to 11 speeds without much trouble save for a degree of retro-grouch static. Both of my bikes have a 16 cog, and for that I am proud, I guess. And maybe my next bike will be 12 speed... that'll just mean it's one gear faster, right?!

Nothing can be future proof forever. But even if you only upgraded to 10-speed... it's been around long enough now, and is still being offered on the vast majority of new bikes... I think you'll still have a good supply for another 20 years. Just like your Campy 8 speed. When you think about it that's not a bad run at all... I wish most everything else in life was so future proof.

So on some hills, I feel like I need a bail out gear. Originally, I was planning on going 11-32 or 12-30, or even 12-32 (SRAM). ... . Though sometimes I wish that the gearing from 19 is 22 then 25 instead of 21 and 24. Anyway, do any of you think this is the best option? I know some or most will say HTFU, but you know what? Some just really need that bail out gear - and I happen to be just one of the "some".
Get a triple and run a 12-26.
