Bicycle Repair Man !!!
My suggestion is to use a SA 5-speed hub. While the Shimano Nexus 7 has very evenly spaced steps, the range it not that much more than a SA 5-speed hub. Add to that the fact you would need to cold-set the rear dropouts and it becomes a larger project.
One other thing that comes to mind, at least for me, is that an old English steed like that Moulton should have an old English hub like a Sturmey-Archer.

Any recommendations on a good break set for these bikes? Thinking somthing low priced possibly from Tektro? What reach is appropriate for these bikes with 349mm rims?

Got my wife a complete Moulton so I have inherited the green project.
Took the good parts from both damaged forks to make one good one.
Cleaned up the fork innards, greesed them polished up the paint.

Disassembled the bike so I could get the nooks and crannies when I polish the old paint.
Tons of scratches and flaws but still polished up with some shine to it.
I almost never repaint old bikes. Love original paint no mater how damaged it is.

Got a great pair of wheels from a BF member. And added some other parts I had around the shop.
Down to the details. I really need a set of the moulton white plastic cable guides but they are very hard to find in the USA hopefully a set will turn up.

Wheel set came with this really cool Jtek 8 speed shifter made to work with the SA hub. Super easy setup and works like a champ.
Finally got to take the Moulton out for a shake down ride tonight. Rides great no squeaks rattles or problems.
Parked in front of community market with my Moulton.

Basket showed up in the mail today. Temporarily attached it with zip ties. With added heavy basket this bike is officially tank-o-riffic probably well over 30 pounds.
First of many trips for Mexican food.
