Cleaning cog
Could anyone recommend a good way of cleaning a cog that has some old dried up gook on it?

Simple Green... soak... wipe off "gunk" or scrub with toothbrush if necessary, then rinse, then dry, then lube...

Try WD40. It was originally designed as a cleaner. I've used it on race motorcycle sprockets many times. It works really well.
