shimano coaster hub on mtb frame.
Wondering: is the Shimano coaster wheel (26") sold by, for example, nycbikes, suitable for standard 135mm mtb spacing? from the pics it looks like it'd take a few spacers to adapt to proper width. Also, perhaps, some improvised piece o' metal to connect the brake's anchor arm to the rear stay. Anyone done this before?

I'd guess anything laced to a 26" would be spaced for a mtb. but then again, I haven't tried that hub so I can't be certain.

I've got a Shimano E-Type coaster hub on a Steamroller with 120mm dropouts. There were spacers required to bring the inside width up to 120mm. There are 3 threads visible past the nut on the brake arm side (aprox 1/4"), about 1/4 of a thread on the drive side (with tensioner).
It would probably fit on 135mm, but the threaded part of the axle wouldn't reach the ends of the nuts most likely.

You could also buy a longer axle. Also if you space the hub for chain line the brake tab issue will most likely be resolved.
