Pre-ride: Bread, a couple ounces of Cheese and a small piece of fruit; unfiltered beer.
During ride: Chocolate; for long rides I will bring a balanced (carb=protein=fat) sandwich as well.
Post-ride: Roasted or grilled meat (red/white/fish) and vegetables; unfiltered beer.

Oh to actually post honest and helpful info
Not that I do this before I ride but it should be the same thing as going to the gym.
Pre-ride : Whey powder 50 grams, 1 banana (1 hour before +)
During ride: Whey powder 50 g, Dextrose 30 g, 30 g Maltodextrin, Glutamine 5 g
Post Ride: Whey powder 50 g, Dextrose 30 g, 30 g Maltodextrin, Glutamine 5 g

Before a ride, I eat whatever. Doesn't seem to make any difference really.
During a ride I like accelerade. It's got carbs and protein and some sciencey stuff and it seems to work real good.
After a ride I drink a protein shake.
Kinda lame to deal with all the special drinks and such but it cuts my recovery time in half. Usually after a long ride there's beer and hamburgers involved

Some eggs morning of a long ride. Bananas or peanut butter sandwiches for quick energy during the ride. Beer once it's all over. Hydrate with one water bottle of just water and one bottle of 75% Gatorade 25% water.

Get some nice and firm tofu that has some good texture (unlike some of those jello-like tofus) and cut it into strips (think fat french frys). Fry these up in some butter until they are browned on the outside. Salt and pepper them, and dip them in BBQ sauce. Delicious.
