700c 23c Wheels
I am about to buy a fixed wheelset for an old Centurion road bike that originally used 27" wheels. Will this wheelset work for it? I will be running a front brake. Sorry I am sure this is a dumb question but I am just getting into fixed and I don't know sizing yet.
Thanks
By the way this is the wheelset I might get.

700c is smaller than 27". They will work just fine, however you have to take into account the smaller size and may have to get longer reach brake calipers. These are pretty easy to find.

only reccomendation if you buy that wheelset, which by all means i think its the best deal for a wheelset if you are just getting into fixed, is change the cog and lockring RIGHT AWAY. the junk they put on there is super soft steel and will strip the **** out of your hub, but other than that, have fun!

You're running into a good bit higher likelihood of pedal strike if you're running fixed. Makes a lot more sense to just get wheels that fit properly

700s replacing 27s has been done many times, he will be more than fine running those wheels.

qft: may have to get long reach brake calipers
you shouldn't have any toe overlap now if you didn't before.
and if pedal strike is bad get shorter crank arms.
