What are considered the most desirable Singlespeeds around?

And why? What is it that makes these particular bikes so coveted?

What should one look for in a premium SS?

Are there any bikes that are designed from scratch to be SS's?

Geometry?
Material?
Weight?

The most desirable bike is really up to you to decide what your are trying to accomplish with your SS. Commuting, utility bike, snow/bad weather bike...etc etc.

So you have an unlimited budget, don't care about frame material, geometry, or manufacturer, and you want fender mounts.

Am I missing anything?

Personally, I want mine for aggressive urban riding.

Is there a "holy grail" of SS bikes? Frames?

I wouldn't need them. I'd prefer to ride a Mountain Bike in rainy weather.

Since some have mistakenly assumed that I was asking for "me", let me clear the air up;
What I am asking is what are "your" personal opinions of bikes that you consider desirable
(not what bike should I buy).

My recommendation is for you to go looking at "bike porn" threads to get your answer. What's desirable is in the eye/mind of the individual, and there is enough variety in this space that there is no clear pinnacle of desire. Your question is far too general to answer.

Edit:
First distinguish between fixed and singlespeed (i.e. freewheel).
Yes there are many bike frames designed for fixed gear or SS riding, and they include all the bike/frame types you know.

BMX
Track (fixed)
Cross
Mountain
Road
etc.

I assumed all SS's were converted road bikes.

I'm trying to learn about SS bikes.
I've done the web searches.
I'm getting my first SS early next week.
I know I'm going to like it.

I already ride my road bike like a SS in the city.
So I decided to get a bike that I'm going to tailor specifically for urban riding.
Not paths, not group rides, but aggressive full throttle city street rides.

I'm an upgrade nut. Already have campus pedals for it. Saddle will most likely be next.
Once I've spent some time on the bike, I'll upgrade what I think will improve my riding.
Wheelset, brakes, tires...of course.
