I probably wouldn't touch it. If you find another one with a wasted rear wheel, or missing rear derailer or something, then yeah.

You seem to know what you want to do, so the only thing left to do is just do it.

Don't do it. Just buy an off the rack or find a retro frame if you're hell bent on building one up. That bike looks beautiful, and the "weight savings" touted by conversion are negligible.

ehh it's your bike so what you will, but if you insist on it please don't chop anything off so you can reverse it.
