What is all this crap about modulating speed with different types of brakes? If you have any brake, you can modulate your speed. Just use one finger on the lever and you will be less likely to lock up your wheel.
I like cantis the best of any brake. Simple to adjust and they shed mud well.

I know its not a popular frame but the Kilo OS has basically everything your looking for. its probably a boat anchor with the extra toptube but it posses every characteristic you seek function-wise. also inexpensive.

Regarding brakes. I've only used calipers to this point. I'm familiar with them & they work great for me. I have only read about cantis & what I've come across several times was that they are great for stopping power but not great for modulating speed. Now that I've heard different, I'm open to them. I just need to ride something to see the difference.

I've switched my focus to single speed CXs. Being open to cantis now, these are exactly what I'm looking for.
Regarding brakes. I've only used calipers to this point. I'm familiar with them & they work great for me. I have only read about cantis & what I've come across several times was that they are great for stopping power but not great for modulating speed. Now that I've heard different, I'm open to them. I just need to ride something to see the difference.

Fixed is cool...but in the city, being able to coast is nice.
You may want to go up on the stock 36/16 gear ratio for city use. That low gear is for tramping through mud and up hills. But, you can effectively setup a street-friendly gear by using a 13 or even a 12t cog with the stock chainring. 48/16 = 36/12. I recommend this for SINGLE SPEED only. this is too big for fixed gear use.
The cogs are splined, so I think you can simply buy a 12t for like $6 like this one:

Single speed CX bikes are pretty awesome. I consider them the ultimate city bike. Comfortable geometry, wide tires, strong frames, basic drive train, brakes, brake hoods, single speed, etc...
Fixed is cool...but in the city, being able to coast is nice.

I would build up a crosscheck, or buy a complete and strip and sell all the shifty parts. You won't even need new brake levers since it doesn't come with STI.

I'd be on a Kilo WT except that I hear that toe overlap would be a major issue running fenders on a 53cm. Outside of that, it's perfect:
-Track ends
-Room for wide tires & fenders
-Takes caliper brakes
-Fender eyelets
I know the caliper brakes are the biggest obstacle trying to run wide tires & fenders, but I really appreciate the ability to modulate my speed. Never used them, but my understanding of cantis is that they are great for overall stopping power but not so great for modulating speed.
Track ends are probably another obstacle. I flip & flop my current wheel for different GIs quite often, so track ends are very functional for me. I'm strongly considering an IGH, so track ends may not be as important.
Any suggestions? Does this bike exist without going custom?
Also, if Gyeswho can fit 700x50 Big Apples under those Tektro R556s, how wide of a fender can I expect to fit under those brakes? Or is there a wider, long reach brake on the market?

Track ends - The fenders will be a pain to deal with using track ends
Takes caliper brakes - You don't need caliper brakes when you got V-brakes or Cantis to choose from. Plus you have to deflate the tire a bit more when using big tires with calipers. The R556 brakes can fit SKS 50mm fenders under it, but max tire size is around 32mm with them
Get a Crosscheck that way you can switch between fixed or gears to your liking and it covers everything you need. It's really the bike you're looking for. I've gotten plenty of configurations with mine including Big Apples stuffed under fenders. I have 2 Crosschecks just because they are that awesome. The WT is very limited compared to the X-Check

I've settle on a feasible set up and narrowed my choices down to:
Cross Check - Seems to be the bike that has everything I'm looking for. I was hoping for 40c tires + fenders, so seeing Big Apples on your Cross Check, Gyeswho, puts the CC in the lead. Aesthetics & no IGH on the complete have me still considering other bikes.
Nature Boy - Less tire clearance puts this behind the CC, but the internal cable routing keeps it close. In hopes that All City is being conservative with tire clearance, anyone know the actual max size tires/fenders that will fit?
Charge Mixer/Tap - Coming with IGH puts them in the race. No mention of max tire/fender clearance, but they come with 32c tires, keeping them behind the other 2. If that's the max, it's a no go.
Public D8 - Quill stem & IGH puts this on the list. No mention of max tire/fender clearance, but it comes with 35c tires.
As this will be my everything bike, I definitely want gears but still want to keep it clean & simple, so IGH it is. That means immediate changes for the Cross Check & Nature Boy - if I go complete - that involves more than just buying parts.
And not being familiar with part quality, if I go complete, makes it hard to make value comparisons.
With these issues in mind & me now being open to other brake types, anyone care to help me narrow my list down or even add something I might not have considered before. I want to keep this around $1,000, a bit more if necessary... maybe I should just say $1,250 is the max.
