    27" Tires, What psi?

I've got a set of mint vintage Mavic G-40 27" hoops laced up single speed, whats a safe air pressure to run in these to avoid pinch flats? I always run at least 100 psi in my 700c tires, just wondering if that is what I should run in these old 27" wheels to?

It's a function of tire width, not rim diameter. Assuming those are modern hook rims that can accept high pressures without the tires blowing off, I'd use exactly the same pressures you use on 700c rims. Also, there's very little difference between the diameter of 700c and 27" rims.
