1. You don't have to ride brakeless to ride fixed gear.

2. What kind of brakes can you put on your frame? (calipers, cantilevers, discs, etc.)

Tektro calipers are decent and cheap. I'm running Shimano Sora, which are also decent and cheap.

I like the kind of brakes that stop you before you're stuck with nothing else but busting a sw8 skid into something that's not going to get out of your way.

If your bike is drilled for calipers, get calipers, if your bike has canti mounts, get cantis. it's not hard.

But the collision is so zen-like. You just don't get it.

I'm a big fan of ultegra/dura ace calipers.

7800 brakes are things of functional and aesthetic beauty:

I always just use Tektro, I even used to use them on my old bmx's. I don't think I would notice between cheap tektros and an expensive set up. I always just slightly use them to slow down then use my legs to completely stop.

Any modern, dual pivot brake caliper will work fine - the biggest issue is getting one with the right amount of reach, though even this isn't a problem if your rear wheel fits close to the frame (like a racing bike).

The type of levers will depend on your handle bars and there are lots of options there as well.

If you want a recommendation, Tektro sell very good brakes and brake levers at reasonable prices.

Another vote for dual pivot road calipers with Kool Stop brake pads. Preferably 105 level or ultegra level but yes, basic tektro works too.

I've had DA 7800, Ultegra, 105, Nashbar and Tektro. All were spec'ed with salmon Kool Stops. They all performed well and I wouldn't hesitate to put any one of them on my bikes. I'm currently on Tektro r530's on the FG roadie and CR720's on the SSCX.

I have a set of Ultegra 6500 calipers from my first nice bike. Nothing has worked better. Those DA calipers brake just as well and are gorgeous to boot.

I have an ultegra 6500 caliper on my fixed roadie. It works perfectly.

You can't see it, but it's there.

Worth a lot mate. There was a time when calipers varied from scary down to bloody awful. The modern dual pivot design has given us brakes that vary from more than sufficient through to 'oh bloody hell I didn't want to stop that quick'.
In some things, development is a positive ... then some git decided we all needed electronic shifters.

I switched over to some vintage calipers for an older frame and took some like new 40-50mm reach silver campy veloce dual pivots off. They have stock pads and an extra set of kool stops that I can let you have relatively cheap.
