Unless you want to ride all the way out to the San Gabriels (100+ miles round trip), Santiago, Modjeska and Silverado Canyons are probably the closest you're gonna get to a Mtn style ride. If you're reffering to mountain bike rides, that's a different story, there's lots of good stuff around.

If you are looking for off-road stuff, check out ODC (outdoorsclub.org). Folks I know lead rides regularly down there.

From Irvine lots of good areas to ride... Peter's Canyon, Limestone Canyon, Blackstar, Santiago Oaks, Aliso Woods, Caspers, O'Neill, San Clemente, Ladera Ranch... just drive towards hills/mountains - you will find something to ride. In Irvine is the Irvine Open space (Bommer Canyon) which connects to Quail Hill, Serrano Ridge, The Nix Center, Laguna Canyon, El Moro etc.
If interested in riding the "private" public lands (docent led rides) go to irvineranchconservancy.org and check out activities. A number of great MTB rides are listed.
If you are alittle more specific, I could give you more details.

Sorry I should have added a smilie... wasn't trying to be rude. Just trying to say that it's difficult for people to respond when so little information is provided.
Unterhausen: This is what people need:
Type of ride - road or mountain
Length of ride
Intensity of ride
starting point (are you willing to travel?)
desired result
projected elevation gain
This would be very helpful. OC is filled with alot of elevation - but if you are looking for a long sustained climb you most likely will have to travel out of OC to LA or SD. The longest climb I can think of is PCH to Newport Coast then up Vista Park or Ridgeline. There might be others. Even that is only a few miles. But you can spend a day doing climbs if you hang in the area.
Now if you on a mountain bike, 'nuther story!
