Biking and Hiking

Last winter I bought a Specialized Hardrock for trail and winter riding/commuting. I also do a lot of hillwalking and intend using this bike for the long trail into some of the more remote hills. For this I will probably carry full camping gear for overnighters. The weight of my pack is usually around 12 - 15kg.
Can anyone recommend a good rack and pannier combination, bearing in mind I'm based in the UK.
