Biking and Hiking

Last winter I bought a Specialized Hardrock for trail and winter riding/commuting. I also do a lot of hillwalking and intend using this bike for the long trail into some of the more remote hills. For this I will probably carry full camping gear for overnighters. The weight of my pack is usually around 12 - 15kg.
Can anyone recommend a good rack and pannier combination, bearing in mind I'm based in the UK.

For racks, Blackburn, Tubus or Bob Yeuh

For Panniers
Ortleib are the best waterproof models and Altura make decent copycats.
