Sweet! The one thing I've found is that you can ditch the chromebook/laptop and just take along a bluetooth keyboard for the tablet. Saves a little weight, space, and saves some of the concern I have that I'll ruin a bunch of computer gear.
Tablets and phones are perfect for taking and uploading pictures. In my experience, they usually get on wifi hotspots better than laptops and chromebooks.

It was my plan, until I plugged mine in (also an Acer Icona, W3 with full Windows load) and found the battery was shot. I've used it for many non-biking trips, I second the idea behind a lightweight bluetooth keyboard and mouse. If you buy one with Windows, it can do anything a full fledged computer can do: namely, controlling and accessing USB devices and installing any software that exists for computers.
The only thing I'll say is if you plan on using it for photography, put some energy into finding one with a good camera. The cameras on them can range from awesome to acceptable to downright crap. I loved my tablet while it lived, but I'd never use it for photography beyond live video chatting.

No, in this case you would just want bluetooth to work between your tablet and the bluetooth keyboard (which should be very simple to accomplish).
If you are trying to hook up a smartphone to a Chromebook with bluetooth, it probably won't work. Or if it does, it might be of limited use to you, as you may not be able to share internet connection or share files between the two.

Do you have any older ones that you wouldn't mind hauling? Bike tours are basically where all my old devices go to die when I'm thinking an upgrade might be worthwhile.

Do they all have built-in gps so it will work without a cell signal? My old Samsung Tab 2 7.0 does, but by now it seems to be getting bogged down. I like it with Backcountry Navagator.

I travel with a smartphone (Galaxy S5) and s tablet (Nexus 7 2013)
I always start thinking I'll use the tablet as much if not more than the phone, but end up using the phone most of the time - including connecting to a remote computer.
I keep the tablet as a backup (my tablet is 4G capable) and for occasional work (extensive text editing, spreadsheet, coding on a remote computer and the likes)
If you don't have a smartphone, I'd say go for the tablet. Otherwise, it may not be as useful as you'd think.

Every day a winding road
Get a camera. Even a cheap one will take better photos than the tablet.

By the time you actually take a bike tour, technology will allow you to connect with the internet using the force, so I would wait.

I don't think there would be a noticeable difference in weight between a 7" vs. 8", so go with the better deal or the larger one if all things are equal and you have the space to fit the larger unit. Otherwise, go with the smaller one. Either should work just fine.

I have a 7" LG Gpad. I set it up to run "Split Screen" so I can run "Urban Biker" & MP3 Player at the same time. I've also used it for weather radar. Much more readable than my Smartphone, speaking of which, My cell is an LG G7 so it pairs nicely with the tablet. I leave the phone in my pannies, but if I get a call, I can answer it through the tablet. The tab cost $99 and can do so much more than a Garmin that costs over 3 times as much.

I take an iPad mini for solo tours. Have some Movies, Games, and Music to pass the time when my SO is not along. Given it is flat/small/light, why not?
Otherwise, I just use my iPhone and take books.

Just make sure you fully understand what you are getting with a tablet camera. I'm not saying that there are no tablets out there with a decent camera at the $100 price range, but I am saying I don't personally know of any and most of what you are going to find in that price range is going to be of limited quality and usefulness and more than likely rather disappointing photowise.

Enjoyed touring with my tablet because I could download maps and they were easier to read than on my phone. Tablet has to have GPS for that to be really useful, though. I don't often use my tablet for photos because I usually use my phone or a stand-alone camera. I also use the tablet as an e-reader and to watch videos and, of course, to use Facebook, but I usually move the photos into the tablet from whatever device I started with.
For me, having GPS is one of the features that makes the tablet a good touring tool. I have found that with Apple, the GPS chip is bundled with the cellular data chip, so a Wifi-only model will not have a GPS, but a cellular-capable model will, even if you don't sign up for service. Android tablets often have GPS chips even when they don't have cellular service, but you have to check the specs to make sure. I have no idea about Windows devices.
I also like having a keyboard. I used to have a full-sized bluetooth keyboard, but I stopped carrying it because it was a pain to pack compared to the amount I used it. Now I have a small, folding keyboard, although I have not yet taken it on any trips, but that is the plan. It folds up small, is slightly cramped to use, but better than the touch screen, and only cost about $35 USD.
Previously I used a 10" tablet, as well, but I found myself wishing it packed smaller, so I replaced it with a 7". I still would like a 10" for around the house, but I have no desire to tour with one now that I have a smaller option.
