Is it possible to ride the trans am mostly on dirt? Using roughly the same guide that ACA puts out?

The TransAm is a paved route - of course you can plan your own off road sections - if you haven't done much TOURING off road (not mountain biking) I'd keep it to shorter segments - mainly primary forest roads.
