If you want full fenders, I quite like the flat ones, like those made out of wood, good coverage, and they don't care about tire contour or size as long as there is a gap for them to fit into the fork or stays. Pretty easy to make your own.
I've never run the big apples, but i have run 1.95 slicks for comuting. I don't feel the need for them on a touring bike because the load seems to hold the frame to the road a little better and I find the rolling resistence is much higher. Don't see why you shouldn't if you want to, though.
