Steelman and other all-in-one, touring-plus, high-versatility bikes?

Steelman and other all-in-one, touring-plus, high-versatility bikes?
Some of these reviews mention looking for a bike that will do it all and do it well -- and they seem to have found one.
Certain cross bikes (for some people, cross bikes with longer stays, like some of the Tricross Sports, and wide-range gearing, and the right braze-ons) are one way to go.

There is something attractive about having one bike that is so versatile, and so satisfying to ride in various modes.
What other bikes might share the high versatility and high level of ride quality (in the multiple categories mentioned by some of the reviewers)?
