Good On-the-Road Cooking Videos? Own Favorite Recipes or Techniques?

Came across these easy one-pot (for the most part) ideas, and thought they might be of interest to some out there:

Italian Tomato Cheese Polenta,

Bean & Rice Burritos,

Pizza Ramen (or Spaghetti Ramen):

[New steamer bags? New cozy designs?? -- anyone know anything about these?]

The infused olive oil sounds great:

Ramen Primavera

Pesto Couscous:

Does anyone recognize the cup she is using?

Steamed Brownies in the snow:

*******
She also has a bunch of other instructional videos posted, and more information at www.trailcooking.com

Anyone know of other good recipes, videos or ideas for good meals while on the road?

From backpacking, one of my favorites is the Viga-brand black-beans-and-rice mix. The beans are dried, so they cook in 20 minutes with the rice, and the flavor is really good. Around here, Kroger has them, Walmart doesn't. Add meat of your choice.

Stuffing mix is a quick-and-easy dish to whip up.
