Forgive my ignorance, but why exactly are you bringing blackcurrants? You do mean those little raisin things, right?
Also, for a week, I'd leave the passport behind, unless you plan on crossing country lines. Also, I would nix the razor, just grow a beard for a week, it beats trying to shave in cold water without a mirror. Also, I don't know if a week really justifies bringing envelopes to mail letters. It is just a week. You might get back before the post does.
I don't think you'll ever really need a pedal wrench on tour, and they tend to be very heavy, I'd leave it at home. You can probably safely leave the cable as well, just inspect your bike before you leave and make sure everything is in good shape.

Ditto about the pedal wrench. I have never taken one on tour and never needed one (unless you need to take a train or plane which requires you to remove the pedals).
You can save some weight by using a shampoo for washing, shaving and hair washing (my partner does). I use a body gel for all three uses.
What about a multitool which includes a pair of pliers?
Otherwise, your list seems fairly good.

Pretty complete list. You got the duct tape and cable ties. I also carry some string and have used it as a clothes line. Make sure you got some needle nose pliers for pulling a tiny wire from your tire. Oh, how 'bout a knife? Probably in your pocket all the time anyway.

Ear plugs take up zero space, and they can be the difference between a good sleep and being tired and irritated for a day. Nail clippers might be a bit unnecessary, especially since you also have scissors. It's only a week.
You haven't currently got any food on your list.

I noticed you have a mirror listed with your toiletries. Do you have a rear mirror on your bike? If so, then maybe an extra mirror is unnecessary.
Same thinking with the torch if your front light is removable.
I do it the other way round; a headlamp mostly used in camp which is strapped to handlebar bag for the (infrequent) times i ride in the dark on tour.
+1 on a knife. Swiss army knife for example. I find the Compact to be light and have the tools I use (well, except for the hook). Or a Leatherman with pliers...
I understand the nail clippers, never could use scissors left-handed :/
+1 on only taking a pedal wrench if travelling by plane/train
Spare tire for a week tour? If you have good newish tires then this is probably unnecessary imo.

Speaking of headlamps, I recently discovered the big advantage offered by two, one permanently mounted on the handle bar that I use for proximity lighting, and another on my helmet(1 watt) for distance viewing. The helmet lamp spots whereever my eyes are pointed, important for checking out turns, and for general awareness of the surroundings.
In the summer, I sometimes get up very early and ride before dawn to beat the heat/wind. Two inexpensive lights do a great job of lighting the way.
