There are benefits of different crank lenghts...but some benefits only manifest themselves if you are spinning really fast or need torque to ride a big gear for a long time. If you aren't racing, then just go with what is more comfortable.

The H+Son rims that I've seen in person (unmounted) paled in comparison to Mavic rims that cost less. Not for me. My track rims are Velocity Deep V and Mavic Ellipse.
I'm not familiar with the hubs, so no opinion there.

It doesn't happen often (knock wood). I've never seen it happen during a standing start. I have seen chains break on 2 occasions during a race and a few drop from the chainring/cog, but in all of them no one was hurt. The breaks are said to be caused by user error either in adding pins back in or not fastening the master link properly. The drops are from either the wheel pulling forward during the race and the chain becoming too loose, or the chain tension was never set properly to begin with.

For a frame with track ends, does it make sense to have the chain be just long enough to get around the cog when the wheel is all the way into the track ends? Then only be able to remove the chain via master link. Is that a good idea or just too inconvenient?
I'm asking because I have trouble putting on my wheel straight. But besides that, I was wondering if it would benefit/harm me in any way to do this.

Designed for "show", not "go". Designed a few years ago when the SSFG manufacturers were in a fight to build deeper and deeper aluminum rims. Aluminum because it's much less expensive than carbon...but cannot be made too thin, so you wind up with either a thin, unreliable rim, or a heavy one. This is also why there exists the Velocity B43.
