    Lactic acid... as an ingredient in food?!?

    So, I was poking around for some Korma sauce to cook chicken in. I happened upon this stuff. Not exactly good for you, I realize. But check out that list of ingredients.

    Third line in the middle... Lactic Acid! WTF? I've never seen that one before!

    Um, where to start.

    First off, lactic acid created by exercise is completely misunderstood.

    Secondly, dietary lactic acid is not related at all.

    Lactic acid is both a metabolic intermediary product and a fuel for muscles and some other cells. The vast majority of the lactate manufactured during exercise or otherwise is metabolized as fuel by the muscles. Adding lactic acid to food can be for flavor or preservative functions (citric and phosphoric acids give most soft drinks a big part of their attraction). Eaten or metabolically derived lactate is processed in similar ways by the time it reaches the cells, though dietary lactate is probably mostly metabolized in the liver.
