5am training. Breakfast?

I have come to the conclusion that with my current life (work and family stuff) the only way I am going to get some good long hours in the saddle is to get up as early as possible. I figure on saturdays I can be on the bike by 5am and be home by 9am giving me 4 hours in the saddle. This gets me home in time to still be able to handle the days family activities etc.

The problem I am wrestling with is food. I don't want to eat any sort of big breakfast right before heading out. I also don't want to get up alot earlier (4:45am gives me 15 min to dress and get out).

So I figure I can eat something like a banana while I dress. Pack something easy to eat like a PB&J, and carry some other food like granola bars and some gels (I actualy like gels and bloks). So mostly I will be eating on the ride.

I expect to make these rides more of my LSD rides, so I am guessing this method should work. I am not going to be going super hard, at least at the beginning, which should allow for a "breakfast" on the bike. My harder interval days are other times in the week.

Does this seem like a sound plan? Any other tips for quick eats before heading out? Like I said I don't want to get up any earlier than I have to, so making a bowl of oatmeal etc is basically out.
