Carbs before the night before, beneficial or not, it will give you a good nights sleep. Add a little protein (meat topping on pasta or the like) just to help any rejuvenation that night.
Oatmeal in the morning sounds like a winner. Again, a little protein (maybe a few egg whites).
As the day continues, eat for your events. It's pretty logical, don't eat right before etc. Try and get some easily digestible stuff, sports drinks, energy bars etc are good. Dried fruit is also good. If you have any extended breaks, try and get in some solid food (low in fat!) that you know you like and is easily digested, nothing exotic.
Stay hydrated! Quality sports drinks, tonnes of water etc. No milk products all day. Nothing else you have never eaten before (if haven't had the energy bars before, forget that idea). You don't want any surprises!
