Price is great for a new bike with those parts,
but do they have your size???
Bikes are also a little like computers in that planned obsolescence way so there are a few caveats with that...

They hav a 49cm and a 53 cm. I am 5'6" tall ... it'd be worth having a sales person work with me, eh?

Are you sure it's a Rennes and not a Limoges? Either way, yes they are both great bikes for the money. Not to be a debbie downer, but I have a feeling you'll be on the small side for a 53 and the big side for a 49.

i think the 53 would work. im about 5'6'' with a about 39-30'' inseam and a 53 fit me. my track bike is a 54. its worth a shot. good price for ultegra components too

Fit is more important than a little savings, so yes.
Not sure from the link how many speeds there are, but 10 speed is the new world order for now.
105 equipped bikes are usually found around that price point, but a 105 bike that fits you is better than an Ultegra one that doesn't...

Go for it. What's the worse that can happen, you get there to find that it doesn't fit?

The 49cm might work for you...

I'm on a 48cm Cervelo...I'm 5'5" with a 28.5" inseam. Go check it out and see what they say about fit.

And I'm 5'4" with a 28" inseam and ride a 51cm Cervelo with 700c wheels. My friend triathlete is 5'7" and on a 48cm Cervelo with 650c wheels. Go figure!
