kickstand for homebrew light utility bike

I'm in the process of converting an early/mid 90's Specialized HardRock for going car-light (i.e. will use the bike for most local errands, grocery shopping, etc). The maximum load (not counting me) will probably be less than 40 lbs. I'm probably going with two of the folding wald baskets in the rear, and possibly with a milk crate or basket in the front (haven't decided about the front yet).

I've been using the (pre-modified) bike for grocery shopping for a while, and it's a real pain holding it upright when loading it. I expect that to get even worse as I'm trying to carry and load up more stuff.

What sort of kickstand is best for this type of conversion? I'm leaning towards this https://www.amazon.com/Pyramid-Sunlite-Double-Kickstand/dp/B000AO9Z7K, but I'm wondering if (1) it's overkill, and (2) will it fit my bike. Some of the reviewers on Amazon said that it was too short for their 26" wheeled mountain bike, and that the return policy is very restrictive.

Would a simple side stand like the ones they sell at Sports Authority be enough? Or would the bike just fall over as I was loading it with one of those? What would be a good stand to get?

I'd probably go for a Greenfield single side if you can't spring for a double-legged plescher.
I have what appears to be the same double kickstand, I tried to mount it on my commuter last year but my size 10 1/2 feet kept hitting it. It's made for a bike with a kickstand mounting plate - it doesn't come with a top plate and both screws (with a funny threading) are rather short. I tried mounting it with a greenfield top plate and ended up through-bolting it with a piece of threaded rod to make it work.
If you're in the Boston area you can have my sunlite double stand.

Tony, Please consider this well built and s-o-l-i-d kickstand for your use.

I have one on my heavy Cruiser that does errand work and I find it to be bulletproof on solid ground. (Note: no two leg stand will be steady on loose rock or uneven ground since the each leg angle is shorter than a single leg stand)

I've never actually bought a new Greenfield. I've always got them from old bikes and have only used the type mounted just behind the bottom bracket.
