One thing I should note is that Maria Leijerstam was accompanied the entire route by two motorized vehicles, carrying all of her supplies. The Spanish guy is completely unassisted. The American had two supply drop offs. I imagine trailing your food/tent/etc. around with you slows you down a bit.

She was carrying her own supplies until 2/3 of the way there, I believe. Still waiting for more details.

Well, that's still better than skiing.

She went 5 days on her own, then elected to have support for the remaining 5 and some-odd days due to daily mileage dropping, and knee issues. This is according to the link posted in a previous post.
