Sure "anything" is possible, but some frames with vertical drop-outs are a real pain to work with--- and therein lie the limits. A track wheel will not be particularly helpful... and most R500s were triples, so you probably have an unusable BB (unless it was swapped out with the crank).
That's what I think too. The simplest and cheapest path is to start with a frame that has horizontal dropouts and a rear wheel that matches your dropout width.
