I don't race but my co-worker does (CAT 2). He says racing season starts sometime in March so there should be lots of races going on throughout spring and summer.
Non-racing events I know of in Vancouver:
- Pacific Populaire (25km, 50km and 100km rides)
- Canada Day Populaire (distance = age of Canada = 143km in 2010)
- Glotman Simpson Cypress Challenge (climb to Cypress Bowl).
There are others I'm sure.
