Swapping to a carbon fork for touring???

Just picked up a Santana Soverign and am looking to swap the threaded fork out for a threadless fork (Chris King Devolution Headset will allow a switch from 1 1/4" to 1 1/8" if I so desire). My wife and I will be using this tandem for both fast paced club rides, racing AND fully loaded touring (front and rear panniers). I'm wanting to swap out the threaded fork in order to get away from the quill stems, lighten the bike and give the tandem a little quicker steering.

Here are my questions:
Do any of you fully loaded tour on a tandem specific carbon fork?
If so, which make/model?
If not, why not?

I can't find a tandem carbon fork with the bolt bosses for a front rack, but there are add-on hardware bits that can transform a boss-less fork into one capable of mounting a rack onto it.

Feel free to ask questions - TIA for the advice.
