According to Thorn Cycles, who make some heavy-duty touring frames with S&S couplings, their frames - already pretty robust - are stronger with the couplings than without them. I've also seen custom tandems and triples made with them, so I think you can take their stiffness pretty much for granted and don't have to worry about "noodly".
Have heard the same and know several people who have S&S, love them and have no problems with them whatsoever.
