1) You can run the Gators at max pressure. I put in thousands of miles on them that way at your weight.
2) The popping sound was the wheel de-stressing and settling. Performance wheels are machine built and not hand finished, so there's no check for windup and all the other things that can happen during a built. Putting localized force over sets of spokes "pings and poings" them into their final positions.
3) Good call on the 1 week check. It's a good wheel, but it needs either a hand-tuning before riding, or a 3 - 5 ride post check to make sure it's in good shape.

I also have a set of Open Pros that now have over 3,000 miles, most of those miles with 28 Gatorskins. My weight has varied between 240 and 225. When I got the wheels I put them on a truing stand and tweeked the tension. I have not had any problems at all.
