I've been running 1.25" Specialized Fat Boys on my Bianchi MTB this year and they are great for minimizing weight, rolling resistance and noise compared with a 1.5+" semi-slick. I haven't had any flats yet but I haven't logged enough miles on them to make any claims of their superiority in this regard. A friend of mine uses 1.25 Avocet FasGrips and they seem to be very similar.

Wet weather traction is alway lower but these would grip as well as, or better than, a semi-slick of the same size. Manufacturers put small grooves in tires mainly because most people won't buy a bald tire.
