For something close to Denver, try the Buffalo Creek area (it's on the website). Great riding, not terribly technical and a pretty area, even if it is in the middle of a burned forest.

Around Breckenridge look for the Peaks trail (Pictures here and minimal directions here) Peaks trail sees lots of traffic but it's also a lot of fun.

Lots of other stuff in the Frisco/Breckenridge area and you can easily rent bikes there.
