It seems when people describe the 105 group they use phrases like "slick shifting" or "smooth" or "bullet proof". Less expensive groups get "good value" or "durable" phrases attached to them.
I always describe 105 shifting as "tolerant" - I ask my bike to do some stupid stuff and it never refuses, no matter how dumb the request.
