Tubus actually makes titanium rear racks if you want something matching. The Tubus "Airy" weighs around 350 g including all assembly parts:

Works best with small panniers like Ortlieb Front-Rollers or Ortlieb Sport-Packers.

The Tubus "Logo Titan" is for normal panniers

Notice the two holes at the bottom of the rack; they are for mounting an extension piece so they work with disc brakes;

Rather expensive, but I don't know of any other rear racks that comes anywhere near the strength-weight ratio of these Tubus titanium racks. There is a 30 years warranty on Tubus racks.

Their less expensive (but still expensive) steel racks are really good too. I really like my Tubus Logo because I sometimes haul heavy loads.

Regarding panniers, then Ortlieb panniers is among the best on the market today; they have the best attachment systems by far, and are fully waterproof. Sturdy too, not only because of the materials but also because of the excellent designs.
