Cool bike. Are tires THAT fat better for loaded touring than something a little narrower?
If you're going to actually tour on it, you might consider trekking bars since you're not going to use bar ends. I was discussing bars with a friend recently who has toured in Europe and Columbia on an LHT with drop bars and he said if he toured like that again he'd switch to trekking bars.
