I just got back from a vacation in the Ocala area. I rode around the Ocala National Forest. Many of the highways have a good sized OL or bike lane. The smaller ones had very little traffic (at least on the weekend). I found most drivers were respectful. SR 40 is the main route across, but you can split off on several of the other CR's. Bonus - you can also stop at one of the many springs and take a refreshing swim.
