I am a Trek rider from way back. Just bought a 1200 and love it. Rode the Etape and the Specialized Allez and decided on the Trek. Did not like the compact geometry of Specialized or the semi compact geometry of LeMond. Both bikes left me feeling like I was sitting too upright, and the LeMond had really wide bars, 44cm, versus the 42cm on my 1200 and 38cm on my 1000 (1989 model). You might want to give the 1200 a look if they have any. You get Tiagra/105 mix on the 1200 vs Sora on the 1000. If you like the Etape ride, find a Specialized dealer and try the Allez also.
